The wonders of the onion ring

From time to time whilst cooking the mundane mid week meal, the one that is created from the stuff found in the cupboard and or fridge… you know the type of meal I mean, these are the ones often dictated by the “use by date” nearest to passing the point at which the urge to put it in the bin surpasses the urge to put it in your mouth….

… the resulting meal can often be found to be uninspiring and lacking that something….

Enter a little quick ten minute wonder, the humble onion ring. Often forgotten unless a steak is in the offering, these little crunchy wonders can be a pure heavenly delight that causes you to stop talking and let out a quiet sigh of contentment. Oh and did I mention that they are super easy to make!

The extensive list of ingredients includes:

  • 1 large onion (the larger the better)
  • 1 cup of flour
  • 2 cups of breadcrumbs
  • 1 egg
  • 3 bowls for the above
  • Oil for frying

Method:

Peel and slice your onions starting from the tip and working towards the base so you can separate the slices into rings.

In bowl one put the egg and give it a quick whisk, in the second bowl put the flour and in the last bowl put the breadcrumbs.

Take a ring of onion and dust it in the flour bowl and then straight into the whisked egg and make sure it’s fully covered in the egg. Finally into the bread crumbs, make sure to cover the ring and gentle press down to aid the crumbs attaching to your onion ring.

Place the finished ring onto a large flat tray and grab your next one. Repeat the process till you have a nice big tray of crumb encrusted rings and then place the entire tray into the fridge.

Heat up the oil in a deep heavy based saucepan or your chip pan. Ideally if you have a thermometer we are looking for 180C as this is the best temperature for ensuring crispy onion rings.

Top tip: cook them in small batches as you don’t want the temperature of the oil to drop too much or you will lose the crispiness and end up with those horrible slimy pale things no one wants to eat.

Fry them till they are a nice golden colour, this will take about 3-5 minutes depending on how thickly you cut the rings at the start.

Pile them high and add to the meal you are cooking that was lacking and as if by magic the meal will be lacking no more and even the mundane will become awesome!

Who doesn’t love nibbling? The late night TV session, a long ride on the train or a short break at work to regain focus – all of these are just a few examples of perfect nibbling moments not to mention the ubiquitous snack in the centre of the table as you enjoy a bottle of wine with friends. All flavours are extremely tasty and made using quality, local ingredients. They are handmade by artisan bakers. They look and taste good, and I believe just as food should taste. So far NibNibs have won a Delicious Yorkshire Award for 2013-2014 and Great Taste award for 2013.

It is a bit higher than you would expect to pay for your snacks if bought from your supermarket but hey… they do offer so much more than your usual mass produced snacks… much more… so in my opinion the price is right and they are worth the extra pennies.

Review – Cocofina – The real taste of coconuts

I don’t know about you, but I just love coconut… coconut water, coconut milk, dried coconut… anything coconut related is on my favourite foods list. This is one of my happy foods, there is something about it that just makes me want to have more and more and I never get bored of it. Pair my coconut obsession with a lovely offer of reviewing some of Cocofina products (all coconut based) and you have one happy me!

I’ve never tried Cocofina before so I wasn’t picky with my selection of products. I asked their PR to make the choice for me, simply because I just wouldn’t be able to decide what I want; I would want it all.

After the initial pictures were taken the first thing eaten were the bars. Yummy! There is a choice of three flavours:

  • Organic Coconut & Date Bar
  • Organic Coconut & Cocoa Bar
  • Macaroon Bar

Both date and cocoa bars are certified organic. They are 100% vegan and have no GMOs. The ingredients list is clear and easy to read, there are no chemical wording or symbols we might not understand. Let’s take a look at the date bar for example…

Ingredients of Cocofina Organic Coconut & Date Bar: Raisins (99% raisins, 1% sunflower oil) (39%), coconut (28%), dates (28%), oats (5%), water. That’s all. And not to forget all these ingredients are 100% organic certified.

Sounds good, doesn’t it?

My macaroon bar came in just a silver wrapping, so I actually have no idea what’s inside of it, but trust me, whatever it is, it taste divine.

After I munched on some bars (I didn’t eat them all at once and all by myself… I was a good girl and shared the love), I really needed a drink so it was very handy I had some coconut water around 🙂

The flavoured coconut water comes in three flavour combination:

  • Coconut Water Mango & Guava
  • Coconut Water Apple & Blueberry
  • Coconut Water Tea and Passion Fruit

The last one was my favourite, but this said they all tasted really nice. You know sometimes when you have a flavoured drink you get a weird aftertaste or the flavours feel just a bit off, fake like… this isn’t happening here. All the drinks taste genuine and simply nice. You get a base line of coconut and all the other flavours on top. They are quite subtle and for sure not overpowering. The same applies with the bars. All the drinks are 100% vegan and with no GMOs addition. Despite me loving all the drinks I was a little bit disappointed to see that they are made from concentrate and have natural flavouring and sweetener added to them.

So I checked the coconut water packaging. Woot! 100% coconut water, nothing else. How great is that? The small note on the side of the box made me smile: “Cocofina coconut water may vary in taste, colour and sweetness depending on the season”. At least you know that this is a natural product and not modified to fit the “standard”.

If you are like me are a coconut fan you should really try Cocofina products, especially the water. It really tastes like the real deal.

Who / What Am I? 13-12

Hello Everyone,

Friday the 13th today! Woot, I hope it will be a lucky one… not that I believe in superstitions but hey…better safe than sorry… just in case, I am staying indoors today… I ran around doing all my errands yesterday so today can be a quiet day in… though still have to look after poorly Mark, who is doing better… Thank you all for a good wishes last week.

The picture from last week was a cheeky one… all of you saying that it was some Wotsits or Cheetos were almost right. It was a shot of a crispy snack, to be exactly it was a Green Pea Snack. I thought the colour may cause you to pause, even if it was only to note my dodgy picture taking skills. All I can say is some of you would be happy to eat some very suspicious looking Wotsits.

Green Pea Snacks surprisingly, are made from green peas and we found that it is a very good way to feed kids some veggies, as most refuse to eat them in their standard, original form. Yes, I know it is not ideal but better this than nothing I would argue. We bought them while browsing in our local Thai food store. Something else we got there – banana chips, which are 97% banana, covered in 3% of the obligatory sugar. Doesn’t sound so bad… they are a good alternative for the kid who doesn’t even want to look at a banana, but will happily sit and eat a handfuls of these yummy crunchy chips… kids hey…

But enough about feeding the next generation… time for this week mystery picture…

Review – Family Favourites – Soreen

Every family has their favourite in regards to food, for us it is Soreen. We all love it and enjoy every mouthful.

So what is Soreen?

For all of you who don’t know, never seen it or have never tried it – Soreen is a fruity malt loaf; soft and sticky, extremely tasty, surprisingly nutritious and even more surprisingly low in fat. I have heard people referring to is as “sticky bread”, “black bread” or fruit bread”.

Soreen has been baking fruity malt bread for 75 years now. The original recipe one is still the same but there are a lot of new additions to the Soreen family:

  • Soreen Limited Edition Chocolate Malt
  • Soreen Lunchbox Loaves
  • Soreen Toastie Loaf
  • Soreen Snackers
  • Soreen Banana
  • Soreen Apple & Sultana
  • Soreen Snack
  • Soreen sliced
  • Soreen Cinnamon & Raisin
  • Soreen Fruity-Five
  • Soreen Go Bar

That’s a great choice and everyone can pick something for themselves. Different flavours and different sizes of loaf – perfect for every snacking occasion, from the family breakfast where we can all share one loaf to single serving’s for the school lunch box.

From this huge selection of Soreen goodies I have found a few new favourites myself. One of them is the Toastie Loaf. The main reason I prefer it just a bit more over others is the fact that is it not messy. It comes in a big pack, already pre-cut into thick slices perfect for toasting. I don’t have to spend 5 minutes trying to cut it into perfect slices, which is only possible with original loaf after years of practise (don’t get me wrong I still love the original loaf as well, but I’m not always in the mood for sticky bread wrestling… sometimes I just want to eat… now). Also because of its size it makes a perfect toastie… hence the name of the loaf I guess 🙂 and with a bit of butter… yummy… I think I just made myself hungry again…

The second product which in my opinion deserves special recognition is the Soreen Snack. This is Soreen for lazy people and I sometimes belong to that group (don’t deny it, you do to). A Soreen Snack equates to two slices of Soreen fruity malt load, already buttered and neatly packed in a single serving wrapper. This is a perfect product for when you’re on the go. The packet itself is small enough to fit into your handbag, backpack, or even your pocket so you can retrieve it and munch away whenever needed. Perfect as an energy booster at home or in the office when you pushed for time and every minute counts. It is also great as an emergency snack in the car… imagine you are all stuck in a traffic jam, which seems to be every journey now a day’s, wishing you had something to eat… a Soreen Snack is just perfect for those moments, I know I have the T-shirt…

The third product which I would like to describe in more detail is the Soreen Lunchbox Loaves. These are mini loaves of original or banana flavoured Soreen. A Multi-pack contains five individually wrapped bite size loaves. Each bar provides less than 100 calories and less than 0.3g saturated fat. These are perfect for school lunch boxes or just as a quick snack. Again, this product is an ideal choice for an “on the go” snack, when we need a quick energy boost or just fancy a small bite.

Taking into consideration all the flavoured Soreen available like Soreen Banana, Soreen Apple & Sultana and Soreen Cinnamon & Raisin – I have decided that the banana one is my favourite. We tried them all when they first came into our local shop. We bought one each just to check them out and see if they are as tasty as the original one… surprise, surprise they are. What is the most pleasing thing about them though, they really taste of the fruits stated on the pack. Soreen Banana is much lighter in colours and tastes like squished bananas… again yummy, and again I am hungry…

I never tried the Soreen Chocolate… I have no idea how I could have missed that one! Yet obviously, I did. A fact that will soon be rectified, trust me.

An added bonus about Soreen – you can buy it almost everywhere. Every supermarket or food store chain stocks it… ok they may not have the full selection, but they will always have something from the Soreen family.
